2 cups all-purpose flour ¾ cup brown sugar (top it up with just a bit of white sugar)
1 teaspoon baking soda 2 eggs, beaten
½ teaspoon baking powder 2 ½ cups mashed overripe bananas
¼ teaspoon salt
½ cup Becel margarine
Directions:
1) Preheat oven to 350 degrees F (175 degrees C).
2) Lightly grease a 9X5 inch loaf pan
3) In a large bowl, combine flour, baking soda, baking powder and salt.
4) In a separate bowl, cream together margarine and sugar. Then stir in beaten eggs and mashed bananas until blended.
5) Stir the banana mixture into the flour mixture until moistened.
6) Pour the batter into the lightly greased loaf pan.
7) Bake in preheated oven for 60 minutes or until toothpick comes out clean.
8) Let bread sit for about 10 minutes. Slice….and enjoy!
